A Great Cupcake Cookbook for Vegans

Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz and Terry Hope Romero

For Christmas, I was excited to receive a copy of Vegan Cupcakes Take Over the World by Isa Chandra Moskowitz and Terry Hope Romero. It was a gift from my eldest brother and sister-in-law. I never told them that I wanted it, but I have secretly had my eye on this great cookbook for a few years. It may just be my favorite present of all.

The cookbook is filled with a collection of wonderfully delicious cupcakes - all of which are created with completely vegan ingredients. That means no animal products or byproducts on any page! Not only are the recipes enticing, but the accompanying photos are mouth watering. I have yet to bake any of them, but I am planning on whipping up my first batch this weekend.

Health Benefits of Being Vegetarian

Whenever people learn that I am a vegetarian, they immediately ask me how I get enough protein in my diet. There is a stigma out there that makes people think that vegetarians are not eating a healthy, nutrient-rich diet. That is simply not true. My own doctor is often surprised by how healthy I am. My blood tests always come out great, and I could not be in better shape.

Vegetarians get more than adequate amounts of vitamins and minerals in their diets, as long as they eat well-rounded meals. There are also plenty of health benefits that come to those who choose to give up consuming meat.

As someone who has been a full-fledged vegetarian for almost two decades, I am astonished by how many of my acquaintances claim to be a vegetarian, when they are obviously not. It seems that so many people want to have the title for themselves, but they do not completely understand what it means.
